Greek Salad

1 seedless cucumber sliced
1 large ripe tomato, sliced or cubed
1/2 green bell pepper, thinly sliced
1/2 red onion, thinly sliced
12 kalamata olives
1/2 lb feta cheese
2 tbsp olive oil
1 tsp oregano
dash of salt and black pepper
lettuce (optional)

Directions: if using lettuce...wash and chop the lettuce into bite size pieces and place on the bottom of the salad bowl, drain off excess water. Put the sliced cucumber, tomato, bell pepper and onion on top of the lettuce. Add the kalamata olives. Cut up the feta cheese into bit size squares and add to salad. Drizzle the olive oil over the salad and sprinkle on the oregano, salt and pepper.

Hhhhmmmmm...I don't seem to see the recipe for the risotto?????
